Heyyyyyy Friends and Neighbors! I’ve missed you!!

You know how you sometimes get so busy for such a long time that you forget about the really fun thing you used to do to keep yourself sane? Yeah, I’ve been that busy and I know it’s been a long time since I posted anything at all, but I’m here now, so… don’t worry.

We’ll be cooking again in no time.

Well, not exactly cooking.

Now THIS is a taco.

I recently had a spare couple of hours one afternoon and I was craving a taco.

Not just any taco. I’m talking about a bright green, crunchy, savory, spicy snack. I’m talking about a chicken taco in a corn tortilla with some lettuce and onion.

That’s easy enough, right?

If you’re any kind of food-eating person, you’ll know that a taco isn’t a taco without some delicious sauce.

And that’s where this post really begins.

Tomatillo Salsa.

Read that again if you need to.  Tomatillos are those weird little green tomato-looking things with the papery husks on them.  They look weird, I know, but trust me. This is going to change you.

Go shopping: 1lb tomatillos, 3-4 garlic cloves, a big handful of cilantro, about 1/2 C diced white onion, 1/4 of a fresh lemon, light olive oil, water, salt and pepper.

Cook: HAHA you don’t have to cook! Peel the husks off the tomatillos and wash them. Just chop everything into chunks

and toss it into a food processor.  Whiz it until it has an even consistency.  Only use as much water as you need to get the food processor to work. You don’t want it to be too runny.

Store: Keep this in a glass jar in the fridge for at least a week, probably several.  I actually don’t know because I eat it so fast.

The magic of this stuff, this magical green condiment, is that you can put it on everything.  That’s right! It’s not only for tacos.  Is your sandwich a little boring? How about that cheese omelette?  Personally, I like to smash it with some avocado and eat it with chips or pita.

Also it costs like $2.

BAM.

I’m easing back into this, but please, stay tuned. I might  go strawberry picking this weekend and you know what that means.
